Application Note 245: Fast HPLC Analysis of Dyes in Foods and Beverages demonstrates separation of 10 dyes in less than 5 min using a combination of UltiMate^® 3000 RSLC systems and Acclaim^® PA2 columns.

Dyes are commonly used in the food and beverage industries to make food more appealing, hide defects, or to strengthen consumer perception of the association between color and flavor. Although, the U.S. FDA permits only seven artificial colorings, many are used illegally in foods and beverages. Application Note 245 demonstrates the fast and accurate determination of permitted and illegal dyes in six soft drinks and a gelatin dessert. Good recoveries were observed in each sample, suggesting that the method presented is accurate.
